Brinjal is native to India. This tropical perennial vegetable variety has purple-red fruits that grow as big as an adult hand.

The fruit can be used in curries, roasted, fried, stuffed, braised, stewed or even blended as a dip. Cut brinjals off once the skin looks glossy and ripe!
