Fruiting Seeds: Loofah
Loofah is a climbing vegetable gourd, that is best eaten when young and tender, or can be dried to use as a sponge. Young Loofah fruits are mild and slightly sweet when cooked, and can be stuffed, steamed, stir-fried or stewed in coconut milk.
To eat, harvest fruits when young, before fibres toughen up at 4 inches. To use as a loofah, leave the fruit to dry until the skin is brown, and chip away the outer skin to reveal the sponge.
